What are the available variables in the config file?

What are the available variables in the config file?
Are there other ones apart from the ones that are mentioned in the default config?

Other notes / implementation ideas

I dind't find any documentation about this. Maybe add one if missing?

Environment

borgmatic version: 1.7.0

Use sudo borgmatic --version or sudo pip show borgmatic | grep ^Version

borgmatic installation method: Debian / Python

Borg version: borg 1.2.0

operating system and version: Ubuntu 22.04
